Ingredients (Serves 4)
1. Cocoa powder – 2 tbsp
Corn starch – 2 tbsp
Rice flour – 1 tbsp
Sugar – 1/2 cup
Coffee powder – 1/8 tsp (optional)
Salt – 1/8 tsp
2. Whole milk – 2 cups
3. Vanilla extract – 1/2 tsp
Chocolate chips – 1/3 cup
Method
1. Combine cocoa powder, cornstarch, rice flour, sugar, coffee powder and salt in a medium saucepan. Add milk little by little and whisk until well combined.
2. Place over medium heat and stir constantly for 4 – 5 minutes until pudding thickens. Stir in the chocolate chips and vanilla extract. Switch off the flame and stir until chocolate is completely melted. Pour into dessert dishes while still hot. Cool down and refrigerate for at least 3 hours or until ready to serve.
